Log drains need ability to customize logs sent to endpoints

Andrew M suggests enhancing log drains to allow customization and transformation of logs before they are sent to endpoints. This would enable better integration with external tools like Sentry, where associating logs with user sessions is currently difficult due to fixed log output formats.

Yeah I'm dealing with problems because of this right now. There are no easy ways to rate limit requests to postgREST so it's pretty trivial for someone to lock up the database by making legitimate rpc (plpgsql function) calls too fast. Investigating workarounds, but this really should be built into supabase.
